Ingredients:
- 150g chicken breast (skinless, boneless)
- 100g steamed broccoli
- 50g roasted cherry tomatoes
- 30g cooked quinoa
- 5ml olive oil (1 teaspoon)
- Juice of half a lemon
(~10ml)
- Salt, pepper, and garlic
powder to taste
- Fresh parsley for garnish
Instructions:
- Prepare Chicken: Season 150g chicken breast with salt, pepper,
and garlic powder. Grill it over medium heat for 6-8 minutes per side
until the internal temperature reaches 75°C.
- Roast Tomatoes: Toss 50g cherry tomatoes in 5ml olive oil.
Roast in the oven at 190°C for 15 minutes.
- Steam Broccoli: Steam 100g broccoli until tender but still
vibrant green (about 5 minutes).
- Cook Quinoa: Use 30g cooked quinoa as your side grain.
- Plate & Garnish: Arrange chicken, broccoli, and tomatoes on a
plate with quinoa. Drizzle with 10ml lemon juice and garnish with fresh
parsley.
This meal is approximately 300 kcal with 40g of protein.
